Breaded Chicken + Fresh Mozzarella Tomato Basil Pasta

I am no food blogger. It’s a miracle that I can get a meal plated in this house
without someone sneaking a spoon of sour cream that they thought was yogurt..
or having a melt down over their sister “looking” at them across the kitchen table.

BUT.. I like to eat.
And I NEED to feed my children.
And when I discover a recipe that they gobble up..it is worthy of being blogged! ;)
So I’m going to start a new series called “iPhone Food Blogger”
I’ll share recipes that are a hit in my house, even if it’s just via my camera phone!
Because beautiful staging just ain’t gonna happen.

Ok. Let’s do this!

First up…
Breaded Chicken + Fresh Mozzarella Tomato Basil Pasta.
This one is blog worthy because…..
My almost 3 and 5 year old told me,
“MOM! This is better than PIZZA!”
Done. Boom. Slap a best mom ever sticker on me and
lets do the bed time routine with confidence.
Something about not having to force feed your children that lowers your stress level.
(Jk. about the force feeding……….”You are almost 3 so threeeee more bitesssss”)
This recipe is really easy!
We almost ordered pizza because I was so tired…
and then I was like NO.
I can do this. pulled out ingredients..and made it happen.
You can too!!! ::cheering you on::
I was in the mood for a simple pasta. I had chicken tenders.
and I ALWAYS have Panko bread crumbs on hand.. so this came to be!

INGREDIENTS:
2 HeirloomTomatoes
Fresh Mozzarella
Fresh Basil
Mini Shell Pasta
Pack of Chicken Tenderloins
Panko Bread Crumbs
Olive Oil
Oregano
1 TB Butter
Garlic Powder
Salt/Pepper


STEPS:
Use the breaded chicken recipe I posted HERE.
Preheat oven to 375.
You are going to bread your chicken then pan fry to get a nice toasty crunchy outside..
Place chicken in a 9×13 pan and cover with foil.
Bake the chicken in the oven for 20 minutes tops. (time varies with ovens. check your chicken)
Put your pasta water on to boil.
While your chicken bakes through.. your pasta water starts to boil.
Throw in the pasta. I did mini shells because I don’t have to cut it up.
And I like reducing my work at the dinner table. ;)
Slice up 2 heirloom tomatoes.. Put in pan or cookie sheet with
olive oil/salt/pepper to broil up at end.
Slice up fresh Mozzarella and a handful of Fresh Basil. Set Aside.
When your pasta is done cooking..drain and then put back
in pan with a TB Butter and Salt/Pepper to Taste.
Your chicken should be almost done.. pull it out.
Put your tomatoes in the oven and broil till they are soft/toasty looking.
(up to you how cooked you want them!)
Softly stir in the tomatoes and mozzarella/basil mixture into the pasta.
Plate and enjoy!
