Potato Skins

Ok…so i know i promised the next recipe to be healthy. i lied. Ben and i went on a date the other night with some friends and we were in the mood to order potato skins..but didn’t have them. sad. i know. so ever since then i was like hmm i bet i could make them. Tonight i tried them out and my hubby was pleasantly surprised… i got the “wow this is better than any of the ones from the restaurant!” oh ya. point for the wifey. ;) So delicious! but i can definitely feel my arteries clogging. haha. My deal is….if you exercise..(chase a 1 yr old around all day and sometimes night) and eat healthy most of the time..you deserve a little yummy treat like this for dinner. And since we’re oh so healthy i threw something green on the potatoes. :) enjoy! (i was told these are now being added to the staple game time snacks for the eagles games. good thing they were sooo easy!)


Better than restaurant style Potato Skins-my version.



Ingredients:
2 Russet Potatoes (or as many as you want..) – rinsed and cleaned
Cheddar Cheese
Chopped Chives (optional)
Salt and Pepper to taste
3 TB of Butter
8 slices of Bacon- cooked and crumbled
Sour Cream


1. Pre-heat oven to 400.


2. Wash up the potatoes. I used 2 russet potatoes. sliced them into thirds. (they were so big so i didn’t do the typical boat style for a couple of them. just as yummy! 
cut them up however you want! we were hungry and didn’t want to wait for them to cook all the way through)


3. place on cookie sheet and cover with foil. bake for atleast 30 minutes (hehe i lost 
track of time..go figure. my mom will laugh at this.) (poke with fork..once they are
soft…pull them out)


4. while the potatoes are baking frizzle up some bacon. you can chop them up 
before..or crumble them once you cook them.


5. Let the potatoes cool for a few minutes..or if you are starving like i was…grab 
them with a towel..and spoon out some of the inside. (mash it up..serve it to a 
baby…a husband..whatever.) melt some butter and brush it on the outside and 
inside of the potatoes.


6. turn your broiler on high..move the rack up to the top (careful!-i have a 
fear of hot ovens..you’ll get used to it.) place the potatoes in for 4 minutes..
they toast up fast! just watch it and have it be as crispy as you want it.


7. Pull out the potatoes..load them up with cheddar cheese and the bacon bits. 
place back in oven just till the cheese melts.


8. If you are feeling really healthy…..top the potatoes with chives..and sour cream. enjoy!


 ****Cheesy chicken Recipe: Thawed some frozen chicken…threw them into the skillet with some of the bacon grease (oh yeah i know…. chicken that tastes like bacon. can’t get much better. not the healthiest.. don’t judge me. i nursed a baby all day.) Topped the chicken with cheese. delicious. so great with the potatoes.*****
