TIP #1. ALWAYS have shaved parmesan in your fridge.
It’s great on a salad and amping up a chicken parm recipe!
I added some shaved parmesan to my breadcrumb mix and
it made my normal chicken parm recipe even tastier!
**Put the pasta water on to boil AFTERĀ you bread the chicken.
Start preheating the oven when you START frying the chicken.**
PARMESAN CRUSTED CHICKEN
UseĀ thin chicken breasts.
***add more dry ingredients depending on how much chicken you are making up!
2 eggs beaten
2 tablespoons water
3/4 cup panko italian bread crumbs
1/4 teaspoon garlic powder
2 teaspoon dried oregano (I LOVE this spice. heavy handed with it)
1 teaspoon dried basil
1/3 cup flour
pinch or two of salt and pepper
olive oil (for frying)
+ 1/2 Jar of Spaghetti Sauce
Thin Sliced Provolone (Or mozzarella)Ā Cheese
Thin Sliced Tomatoes
+Pasta of choice (I did noodles with olive oil and the seasonings above!)
DIRECTIONS:
āPull out three bowls.
āIn one bowl combine the water and egg.
āIn your second bowl addĀ the flour
āIn the third, and final bowl, combine the bread crumbs, spices and shaved parmesan
āDip the chickenĀ into the egg mixture, flour mixture, egg mixture and lastly in the bread mixture.
Place on a plate.
āRepeat till all the chickenĀ is coated.
āCover the plate of breaded chickenĀ with foil and put in freezer.
This helps the breading to stickĀ when fried.
āWhen you are ready pull out the chickenĀ a little before frying.
āHeat up your saucepan..and then add olive oil.
āMake sure itās hot enough.. (test with a pinch of flour.)
āI put in enough oil to have them soaked but not swimming in it!
Youāll get the hang of how much to put in.
āPlace your chickenĀ in the pan and brown both sides. make sure not to overcrowd the pan.
āTongs make this whole frying process easier.
āput some of the spaghetti sauce in the bottom of your casserole pan
āLayer the sauce, chicken, more sauce cheese and tomatoes.
Add spices on top if you want!
āCover with foil(TIP: spray foil with cooking spray so cheese doesn’t stick!)
āBake at 350 for 20 minutes.. depending on how thin your chicken is!
(The chicken is browned but just needs to be cooked through. I always check occasionally)
āYou can remove the foil near the end if you want it a little toasted!
This is a family favorite.
We usually have it with salad and some kind of pasta.
