Party Food: A Pierogies Bar!

Almost 10 years ago, I married a polish boy and was introduced to the world of Pierogies!
Since then, we almost always have Mrs. T’s Pierogies in our freezer!
Today, I’m sharing a fun food bar theme that’s perfect for appetizers or party food!

We use Mrs. T’s Mini Pierogies when we do this since we add
a bunch of toppings into our bowls.
Today, we chose the classic cheddar and potato and the four cheese medley.
They’re loaded with flavor and so good! Both favorites in our house!

I love food bars because you can really let each person customize their
bowl just how they want it and people love options!
You can make the pierogies bar a meatless option by skipping the kielbasa.
(Another thing I was introduced to after marrying Ben! ;)

I put out a bunch of toppings that I know my kids love.
We had shredded cheddar cheese, sour cream, frizzed up kielbasa,
chopped green onions and hot sauce for the hubby!
The pierogies can be cooked a bunch of different ways…
but today we boiled some and fried some!

the Mrs. T’s Pierogies are one of the must have items in our freezer.

Mozzarella and Prosciutto Bruschetta

Today I’m sharing an easy and delicious snack that you can whip up!
Mozzarella and Prosciutto Bruschetta. It’s perfectly salty and cheesy with a crunch!
We like making this snack to enjoy together as a couple after the kiddos go to bed.
Put on a favorite show and enjoy some adult time, talking about our kids. ;)
With just a few ingredients and minutes…you have something that’s almost too pretty to eat. almost. ;)
I know the usual go-to is popcorn…that’s our regular too!

But, if you are looking for something a little more fun and yummy, try this out!
Having some friends over for a game night? This is the perfect
snack to put out for everyone to enjoy!
The ingredients are simple and as you are making this you’re
gonna feel like you are on a cooking show..…there’s just something fancy
feeling about chopping up fresh herbs and sprinkling them on top of things! ;)
The main ingredient of this dish is the CHEESE.

Ohh fresh mozzarella… you’re my favorite!
We grab Galbani at our grocery store…they have a whole variety of ways you can purchase it.
I especially love the package of Medallions! They are the perfect size for bruschetta!

Galbani Mozzarella Fresca – Medallions
Fresh bread of choice (I got a whole garlic clove bread! So yummy!)
Fresh Basil Leaves

Just a few steps and you will be snacking!

STEP ONE: Preheat oven to 450 and slice bread.
*TIP* Turn the bread upside down before you cut.
It will help keep them from falling apart and be pretty even slices!

Layer the fresh mozzarella and prosciutto onto the bread.
Some people like to toast up their bread before but I hold off and do it while I melt the cheese!
I like to put my mozzarella onto the bread at an angle.
Then you can see all the deliciousness from under the prosciutto.

I got excited today but you don’t want to put the basil on until after you get them all melty and delicious.

Toast them in the oven at, 450 for 5 minutes!
While they are getting melty in the oven I typically slice up my fresh basil leaves.
The trick to getting the pretty strips is to take a leaf or two and roll it up, then slice!
When they come out of the oven, sprinkle and you’re done!

I feel like at- home dates are the only thing we can swing these days.
Life is so busy, but we still want to make time and effort for each other.
I love how this recipe feels special and jazzes up a normal hang out night.

Parmesan Crusted Chicken


TIP #1. ALWAYS have shaved parmesan in your fridge.
It’s great on a salad and amping up a chicken parm recipe!
I added some shaved parmesan to my breadcrumb mix and
it made my normal chicken parm recipe even tastier!


**Put the pasta water on to boil AFTER you bread the chicken.
Start preheating the oven when you START frying the chicken.**

Use thin chicken breasts.
***add more dry ingredients depending on how much chicken you are making up!
2 eggs beaten
2 tablespoons water
3/4 cup panko italian bread crumbs
1/4 teaspoon garlic powder
2 teaspoon dried oregano (I LOVE this spice. heavy handed with it)
1 teaspoon dried basil
1/3 cup flour
pinch or two of salt and pepper
olive oil (for frying)
+ 1/2 Jar of Spaghetti Sauce
Thin Sliced Provolone (Or mozzarella) Cheese
Thin Sliced Tomatoes
+Pasta of choice (I did noodles with olive oil and the seasonings above!)

–Pull out three bowls.
–In one bowl combine the water and egg.
–In your second bowl add the flour
–In the third, and final bowl, combine the bread crumbs, spices and shaved parmesan
–Dip the chicken into the egg mixture, flour mixture, egg mixture and lastly in the bread mixture.
Place on a plate.
–Repeat till all the chicken is coated.
–Cover the plate of breaded chicken with foil and put in freezer.
This helps the breading to stick when fried.
–When you are ready pull out the chicken a little before frying.
–Heat up your saucepan..and then add olive oil.
–Make sure it’s hot enough.. (test with a pinch of flour.)
–I put in enough oil to have them soaked but not swimming in it!
You’ll get the hang of how much to put in.
–Place your chicken in the pan and brown both sides. make sure not to overcrowd the pan.
–Tongs make this whole frying process easier.
–put some of the spaghetti sauce in the bottom of your casserole pan
–Layer the sauce, chicken, more sauce cheese and tomatoes.
Add spices on top if you want!
–Cover with foil(TIP: spray foil with cooking spray so cheese doesn’t stick!)
–Bake at 350 for 20 minutes.. depending on how thin your chicken is!
(The chicken is browned but just needs to be cooked through. I always check occasionally)
–You can remove the foil near the end if you want it a little toasted!

This is a family favorite.
We usually have it with salad and some kind of pasta.
